Chocolate Covered Strawberry Overnight Oats

Sweet, creamy, chocolatey overnight oats that are balanced enough to keep you full for hours. The strawberry and chocolate combo gives dessert flavor while still working as a nourishing breakfast. Prep it the night before and breakfast is already done.

Ingredients
  

Oat Base
  • 1/2 cup unsweetened almond milk
  • 1/2 cup sprouted oats
  • 1 1/2 tsp maple syrup or sweetener of choice
  • 1/2 tsp vanilla extract
  • 1 tbsp chia seeds
  • 2-2 tbsp mashed strawberries fresh or thawed frozen
Chocolate Yogurt Topping
  • 1/2 cup Fage 0% Greek yogurt
  • Splash almond milk to thin
  • 1 tbsp sugar-free chocolate pudding mix I use simply desserts
  • Optional: maple syrup or sweetener of choice to taste

Method
 

Make oat base
  1. In a jar or bowl, mix almond milk, oats, maple syrup, vanilla, chia seeds, and mashed strawberries until fully combined.
Chill
  1. Cover and refrigerate overnight, or at least 3–4 hours until thickened.
Make chocolate topping
  1. Stir yogurt, pudding mix, and a splash of almond milk until smooth and creamy. Sweeten to taste if desired.
Assemble
  1. Spoon topping over oats before serving. Add extra strawberries or melted dark chocolate and granola if desired.

Notes

Cooking Notes

  • Stir oats well before chilling to prevent clumping
  • Overnight chilling creates the best texture
  • Add extra almond milk in the morning if you prefer thinner oats
  • This recipe can be meal prepped a couple days ahead
