
Pineapple Upside Down Cake Overnight Oats
All the flavor of pineapple upside down cake, turned into a high-protein overnight oat bowl. Creamy vanilla oats layered with a cake-batter style protein yogurt and warm caramelized pineapple on top. Meal prep friendly, dessert vibes and actually filling enough for breakfast.

Method
Make the oats (night before).
- Add all oat layer ingredients to a jar or bowl and stir well. Cover and refrigerate overnight or at least 4 hours.
- Cook the pineapple.
- Add pineapple, coconut oil and coconut sugar to a small pan over medium heat. Cook 5ā7 minutes until soft and glossy. Stir in cinnamon and vanilla and let cool. This can be made the night before and reheated slightly.
Make the protein yogurt.
- Stir Greek yogurt and protein powder until smooth. Add a splash of almond milk if needed to thin.
Assemble.
- Layer oats first, then protein yogurt, then caramelized pineapple.
Serve cold or slightly warmed.
