Preheat air fryer to 350°F.
Make the dough
- In a bowl, mix cottage cheese, flour, baking powder, salt, garlic powder, and Italian seasoning.
- Stir in 1/2 cup shredded Asiago until a dough forms.
Knead
- Transfer dough to a lightly floured surface and knead for 2–3 minutes until smooth. Add small amounts of flour if sticky.
Shape bagels
- Divide dough into 4 equal portions. Roll into balls, flatten slightly, and poke a hole in the center to form bagels.
Top
- Brush bagels with egg wash and sprinkle remaining Asiago cheese on top.
Air fry
- Air fry for 6 minutes, flip, then cook another 6 minutes until golden brown and cooked through.
Serve
- Best served warm.
