Asiago Protein Bagels

Crispy on the outside, soft and fluffy on the inside, and packed with protein. These air fryer bagels skip yeast and rise time, making them quick and easy while still delivering bakery-style flavor. Garlic and Italian seasoning baked into the dough give them a savory, cheesy finish that works for breakfast, sandwiches, or snacks.

Ingredients
  

  • 1 cup blended cottage cheese
  • 1 cup 1:1 gluten-free flour
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup shredded Asiago cheese mixed into dough
  • 1/4 cup shredded Asiago cheese for topping
  • 1 large egg beaten
  • 1 tsp Garlic powder (to taste)
  • 1 tsp Italian seasoning (to taste)
  • pinch Black pepper optional

Method
 

Preheat air fryer to 350°F.
    Make the dough
    1. In a bowl, mix cottage cheese, flour, baking powder, salt, garlic powder, and Italian seasoning.
    2. Stir in 1/2 cup shredded Asiago until a dough forms.
    Knead
    1. Transfer dough to a lightly floured surface and knead for 2–3 minutes until smooth. Add small amounts of flour if sticky.
    Shape bagels
    1. Divide dough into 4 equal portions. Roll into balls, flatten slightly, and poke a hole in the center to form bagels.
    Top
    1. Brush bagels with egg wash and sprinkle remaining Asiago cheese on top.
    Air fry
    1. Air fry for 6 minutes, flip, then cook another 6 minutes until golden brown and cooked through.
    Serve
    1. Best served warm.

    • Blend cottage cheese first for smoother dough
    • Dough should be slightly tacky but not sticky
    • Flipping halfway helps bagels cook evenly
    • Let bagels cool slightly before slicing for best texture
