Mushroom & Caramelized Onion Ricotta Pizza

This creamy, savory pizza is loaded with caramelized onions, sautéed mushrooms, and a ricotta-cottage cheese sauce for a protein-rich, gut-friendly twist. Greek yogurt dough adds protein and probiotics, while simple ingredients keep it easy on digestion and full of flavor.

Ingredients
  

Pizza Dough
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup Greek yogurt
Toppings & Sauce
  • 1/2 cup ricotta cheese
  • 1/2 cup cottage cheese blended smooth
  • 1 – 1 1/2 cups mixed mushrooms sliced
  • 1 large onion thinly sliced
  • 3 garlic cloves minced
  • 1 tbsp olive oil plus extra for drizzling
  • 1 tsp fresh thyme leaves
  • 8 oz low-moisture mozzarella shredded
  • Fresh parsley chopped
  • Sea salt and black pepper

Method
 

Make the dough:
  1. Mix flour, baking powder, salt, and Greek yogurt in a bowl until smooth. Knead briefly until uniform. Let rest 5–10 minutes. Divide dough in half.
Caramelize onions:
  1. Heat 1 tbsp olive oil in a pan over medium-low heat. Add onions with a pinch of salt and cook 20–25 minutes, stirring occasionally, until golden and sweet. Remove from heat.
  2. Sauté mushrooms: In the same pan, heat 1 tbsp olive oil over medium-high. Add mushrooms and cook 5–7 minutes until browned. Add 2 garlic cloves and thyme, cook 1 more minute. Season with salt and pepper. Remove from heat.
  3. Make white sauce: Blend cottage cheese until smooth. Mix with ricotta and 1 minced garlic clove. Season with salt and pepper.
  4. Prepare crusts: Roll each dough portion on parchment paper to 1/4-inch thickness. Transfer parchment with dough to baking sheets. Dock dough with a fork to prevent bubbling. Pre-bake 5–7 minutes until slightly firm. Remove from oven.
  5. Assemble pizza: Spread ricotta-cottage cheese mixture evenly on crusts, leaving a 1/2-inch border. Sprinkle shredded mozzarella over the sauce. Top with caramelized onions and sautéed mushrooms.
Bake:
  1. Return to oven and bake 10–12 minutes until cheese is bubbly and golden.
  2. Finish: Drizzle lightly with olive oil Top with fresh parsley and optional Parmesan. Let cool 2–3 minutes, slice, and serve.
