French Onion Soup 🧅
Cozy, rich and loaded with deeply caramelized onions, melty Gruyère and toasted baguette. This is one of those recipes that tastes like it took all day, but it’s actually so simple.
I made everything right in my Magnifique Claypot Multicooker, from caramelizing the onions to simmering the broth. I love being able to sauté and slow cook in the same pot, plus it’s made with kaolin clay without PFAS or chemical nonstick coatings.
Ingredients
4 large yellow onions, thinly sliced
2 tbsp grass-fed butter
1 tbsp olive oil
2 garlic cloves, minced
1 tsp thyme
1 bay leaf
1 tbsp flour, optional
1/2 cup dry white wine
6 cups beef broth
Salt + pepper to taste
1 baguette, sliced
1–2 cups shredded Gruyère
Add the butter and olive oil to your pot, then add the sliced onions. Cook on sauté for about 30 minutes, stirring occasionally, until soft and deeply golden.
Add the garlic, thyme and bay leaf and cook for another minute. If using flour, sprinkle it over the onions and stir.
Pour in the wine and scrape up all those browned bits from the bottom. Add the broth, season with salt and pepper and simmer for 30–40 minutes.
Toast your baguette slices until lightly crisp. Ladle the soup into oven-safe bowls, top with toasted baguette and plenty of Gruyère, then broil for 2–4 minutes until bubbly and golden.

🍗 Garlic Parmesan Chicken & Roasted Potatoes
An easy healthier weeknight dinner with tender garlic roasted potatoes, precooked grilled chicken and a creamy Greek yogurt garlic Parmesan sauce. Simple, filling and so good. 🤍
Garlic Roasted Potatoes
1 lb baby red potatoes, quartered
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh parsley
Salt + pepper
Chicken
1 lbs precooked grilled chicken breast
Garlic Parmesan Sauce
1 tbsp butter
3–4 cloves garlic, minced
1/3 cup chicken broth
1/3 cup milk of choice
1/3 cup freshly grated Parmesan
1/4 cup plain Greek yogurt
1 tsp arrowroot or cornstarch + 1 tbsp cold milk of choice
1–2 tsp lemon juice
1/2 tsp Italian seasoning
Black pepper
1 tbsp fresh parsley
Toss potatoes with olive oil, garlic, parsley, salt and pepper. Roast at 400°F for 25–30 minutes, until fork tender.
For the sauce
sauté garlic in butter for 30 seconds. Add broth, milk and Italian seasoning and gently simmer. Whisk in the arrowroot/cornstarch slurry and cook until slightly thickened.
Remove from heat, stir in Parmesan, then let cool slightly before whisking in Greek yogurt, lemon juice, pepper and parsley.
Warm the chicken, pour the garlic Parmesan sauce over the top and serve with the roasted potatoes.

🍌 Banana Pudding Overnight Oats
Banana pudding for breakfast, but make it creamy, packed with fiber and easy to meal prep.
These banana pudding overnight oats are made with rolled oats, chia seeds, banana and Greek yogurt for a filling breakfast that tastes way more like dessert. Prep them the night before and breakfast is ready when you are.
Oat Layer
1/2 ripe banana, mashed
1/2 cup rolled oats
1/2 cup unsweetened almond milk
1 tbsp chia seeds
1 tbsp pure maple syrup
1/2 tsp vanilla extract
Pinch of sea salt
( you can add a scoop of vanilla protein if you like an extra protein boost)
Banana Pudding Layer
1/4 cup plain Greek yogurt
2 tsp sugar-free banana pudding mix ( i use simply desserts)
Toppings
Fresh banana slices
Crushed graham cracker
Mix all of the oat layer ingredients until well combined.
In a separate bowl, mix the Greek yogurt and banana pudding mix until smooth. Spoon it over the oats, cover and refrigerate overnight.
Top with fresh banana slices and a little crushed graham cracker before serving. 🍌

🍎 Apple Pie Protein Mousse
My protein dessert bowls are BACK for fall and we’re definitely doing apple pie. This tastes like creamy apple pie cheesecake filling, but each serving has 25g of protein.
Thick, creamy, and packed with warm cinnamon apple flavor. Save this one for when you want something sweet that actually keeps you satisfied.
Makes 2 servings
Ingredients
1 cup cottage cheese
2 tbsp cashew butter
1 scoop vanilla protein powder
1 tbsp pure maple syrup, or to taste
1/2 tsp vanilla extract
1/2 tsp cinnamon
Pinch of nutmeg
1/2 cup caramelized apples
Directions
Cook the apples with cinnamon until soft and caramelized, then let cool. (You can also sweeten with splash of maple if you like)
Blend the cottage cheese, cashew butter, protein powder, maple syrup, vanilla, cinnamon, and nutmeg until completely smooth and creamy. Fold in or layer with the apples.
Chill for 30–60 minutes, then top with whipped cream, extra caramelized apples, a light caramel drizzle and chopped walnuts.

What you need:
3/4 cup creamy peanut butter
1 serving Chocolate Peanut Butter Naked Whey
1 tbsp oat flour, adding more only if needed (almond works too)
1 tbsp pure maple syrup

3/4 cup melted chocolate
(If use almond flour -add a splash of milk to help form a dough)
Mix the filling ingredients, roll into balls and chill until firm. Dip in melted chocolate, leaving the tops exposed, then refrigerate until set.
