Philly Cheesesteak Breakfast Bowl

A high-protein breakfast bowl inspired by the flavors of a classic Philly cheesesteak.
This recipe combines crispy seasoned potatoes, lean shaved steak, peppers, onions, fluffy eggs and melted cheese for a balanced breakfast that feels like comfort food while still supporting your protein goals.
It's packed with protein, easy to meal prep and perfect when you want a savory breakfast that actually keeps you full.

Ingredients
  

For the Potatoes
  • 8 oz baby potatoes diced
  • Avocado oil spray or olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
For the Philly Breakfast Bowl
  • 6 oz lean shaved steak
  • ½ green bell pepper sliced
  • ½ onion sliced
  • 2 whole eggs
  • 1 cup liquid egg whites
  • ¼ cup cottage cheese
  • ½ cup shredded mozzarella cheese or 2 slices provolone
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
For the Philly Sauce
  • 2 tbsp Greek yogurt
  • 1 tbsp avocado mayo
  • 1-2 tsp sriracha
  • Pinch garlic powder

Method
 

Step 1: Cook the Potatoes
  1. Place the diced potatoes on the metal rack of the Magnifique Combo Air Fryer.
  2. Spray lightly with avocado oil( or drizzle olive oil) and season with garlic powder, smoked paprika, onion powder, salt and pepper.
  3. Air fry until golden and crispy.
  4. Remove and set aside.
Step 2: Cook the Steak and Vegetables
  1. Remove the rack and add the steak, peppers and onions to the glass dish.
  2. Season with garlic powder, onion powder, smoked paprika, salt and pepper.
  3. Lightly spray with avocado oil
  4. Cook on Braise mode until the vegetables soften and the steak is nearly cooked through.
Step 3: Add the Eggs
  1. In a bowl, whisk together the eggs, egg whites and cottage cheese.
  2. Pour into the steak mixture.
  3. Allow the eggs to set slightly, then gently stir until fully cooked.
Step 4: Add the Potatoes
  1. Add the potatoes right on top of the steak and egg mixture.
Step 5: Melt the Cheese
  1. Sprinkle the mozzarella over the top.
  2. Use Max Crisp mode until melted and potatoes are crisp
Step 6: Make the Sauce
  1. Mix together the Greek yogurt, avocado mayo, sriracha and garlic powder.
  2. Drizzle over each bowl before serving.

Notes

Cooking Tips

• Using cottage cheese in the eggs creates a creamier texture while adding extra protein.
• Lean shaved steak cooks quickly and keeps this breakfast bowl high in protein without excessive fat.
• Air frying the potatoes separately helps them stay crispy when added back into the bowl.
• If meal prepping, store the sauce separately and drizzle it on after reheating.
• If you prefer a thinner sauce, add 1–2 teaspoons of water or milk and stir until you reach your desired consistency.
• Provolone cheese gives a more classic Philly cheesesteak flavor, while mozzarella melts beautifully and keeps the bowl a little lighter.
