Creamy Mushroom Chicken Orzo (One Pot)

This creamy mushroom chicken orzo is rich, cozy and packed with protein without needing heavy cream or a sink full of dishes.
Everything cooks in one pot, the orzo absorbs all the flavor from the broth and the blended cottage cheese sauce makes it creamy while keeping it balanced.

Ingredients
  

Orzo Base
  • 1 cup dry orzo
  • 2-2 1/2 cups cups broth chicken or beef
  • 2 cups cooked grilled chicken chopped
  • 1 tbsp olive oil
  • 1/2 onion diced
  • 2 cups mushrooms sliced
  • 3 cloves garlic minced
  • salt and pepper
Creamy Sauce
  • 1/2 cup cottage cheese
  • 2 tbsp grated parmesan
  • 2-3 tbsp broth for blending

  • Magnifique Claypot Multicooker OR stock pot can work

Method
 

Sauté
  1. Turn on sauté mode.
  2. Add olive oil, onion and mushrooms.
  3. Cook for 5–7 minutes until softened and lightly browned.
  4. Add garlic and cook about 30 seconds.
Cook the Orzo
  1. Add dry orzo and toast for 1–2 minutes.
  2. Pour in broth and stir.
  3. Cover and switch to pasta/rice setting (or high slow cook).
  4. Cook until orzo is tender and most of the liquid is absorbed.
Add Chicken
  1. Stir in cooked chicken.
  2. Cover for 2–3 minutes just to heat through.
Make the Creamy Sauce
  1. In a blender combine cottage cheese, parmesan and broth.
  2. Blend until completely smooth.
Finish
  1. Turn heat to low or warm.
  2. Stir the sauce into the orzo until creamy.
  3. Finish with black pepper and adjust salt if needed.
  4. Serve warm.

Notes

Cooking Tips

• I used pre-cooked grilled chicken that I microwaved to thaw beforehand. It saves time and works perfectly in this recipe.
• Add the chicken at the end so it stays tender and doesn’t dry out.
• Blending the cottage cheese gives the sauce a much smoother Alfredo-style texture.
• The orzo thickens as it sits, so add a splash of broth when reheating if needed.
• Both chicken broth and beef broth work well here. Beef broth gives it a slightly richer flavor.

Made in My Magnifique Claypot Multicooker

I made this in my Magnifique claypot multicooker, which makes recipes like this ridiculously easy because everything cooks in one pot.

I sautéed the onions, mushrooms and garlic right in the pot, then switched it over to pasta mode once the broth and orzo were added. No draining, no extra pans and barely any cleanup.
