
Cranberry-Orange Mini Loaf Cakes
These cranberry-orange mini loaves are everything you want from a holiday bake without the heavy aftermath. The cake is fluffy, sweetened with maple syrup, bright with fresh orange zest and packed with tart cranberries. The frosting is the real star. You get this thick, silky orange cream cheese icing that’s naturally sweetened and boosted with Greek yogurt for probiotics. With the option to add collagen peptides for a gut-friendly upgrade, these are the kind of desserts that hit cozy, festive and feel-good all at once. I divide each of these mini loaves into 3 servings ( 12 total)

PREP
- Preheat oven to 350°F
- Grease 4 mini loaf pans or line with parchment paper
MAKE THE CAKE
- In a large bowl, whisk together flour, collagen (if using), baking powder, baking soda, salt, and orange zest
- In a separate bowl, whisk eggs until slightly frothy
- Add maple syrup, melted unsalted butter, orange juice, milk, vanilla, and apple cider vinegar to eggs – whisk until smooth and well combined
- Pour wet ingredients into dry ingredients and fold gently with a spatula until just combined (don’t overmix – a few lumps are okay)
- In a small bowl, toss quartered cranberries with 1 tbsp flour (this prevents them from sinking to the bottom)
- Gently fold cranberries into batter
- Divide batter evenly among mini loaf pans – fill about 2/3 full
- Tap pans gently on counter 2-3 times to release air bubbles
- Bake for 28–32 minutes until a toothpick inserted in center comes out clean and tops are golden brown
- Cool in pans for 10 minutes, then carefully transfer to wire rack to cool completely before frosting
MAKE THE ICING
- Beat softened cream cheese with hand mixer on medium-high for 2–3 minutes until smooth
- Add Greek yogurt, maple syrup, and orange juice – beat until well combined
- Add orange zest, vanilla, and salt – beat until smooth
- Add arrowroot powder gradually (start with 3 tbsp), beating on medium-high for 1–2 minutes until mixture thickens
- Taste and adjust sweetness with more maple syrup if needed
- If too thin, add a bit more rrowroot powder
- Refrigerate for 20–30 minutes to firm up – icing will become thicker and pipeable
- Optional: Beat again briefly before using to restore smooth texture
ASSEMBLY
- Ensure loaves are completely cool
- Using a piping bag with large round tip, pipe thick layer of chilled orange icing across the entire top of each loaf
- Arrange fresh whole cranberries across the icing
- Place dehydrated orange slices at angles
- Tuck fresh rosemary sprigs between the cranberries and oranges
- Sprinkle chopped walnuts or pecans over the top
- You can return to refrigerator before serving
HOW TO MAKE DEHYDRATED ORANGE SLICES (AIR FRYER)
- Slice oranges very thin (1/8 inch)
- Pat completely dry with paper towels
- Arrange in single layer in air fryer basket (don’t overlap)
- Set to DEHYDRATE
- Dehydrate for 3–4 hours ( Check throughout as sometimes they finish faster depending on orange size)
- They’re done when dried, edges curled and you hear popping/crisping sounds

STORAGE
- Refrigerate in an airtight container up to 5 days
- Bring to room temperature 10–15 minutes before serving
COOKING TIPS
- Don’t skip tossing the cranberries in flour or they’ll all sink
- Let the butter cool before mixing to avoid scrambling the eggs
- Let the icing chill the full 20–30 minutes for a firm, pipeable texture
- Arrowroot works way better than cornstarch here
- Make sure cream cheese is fully softened for the smoothest icing
- You can use less icing if you prefer!
