Marinate the Chicken
- Add chicken thighs to a bowl.
- Whisk together pineapple juice, diced pineapple, coconut aminos, honey, garlic, ginger, lime juice, chili powder, smoked paprika, cayenne, pepper and salt.
- Pour marinade over the chicken and toss until well coated.
- Cover and marinate at least 30 minutes, ideally 1–2 hours.
- Avoid marinating longer than 2 hours since fresh pineapple can start to over-tenderize the chicken.
Cook the Chicken
- Heat a skillet over medium-high heat.
- Add the chicken directly from the marinade and sear about 4–5 minutes.
- Flip the chicken, then pour the remaining marinade and pineapple into the pan.
- Let it simmer and reduce while the chicken finishes cooking, about another 4–5 minutes, until a lightly sticky glaze forms.
- Remove the chicken and let rest a few minutes.
- Chop the chicken into taco pieces.
- Return the chopped chicken to the pan briefly so it gets coated in the glaze.
Make the Optional Caramelized Pineapple
- Add diced pineapple to a hot skillet.
- Cook 2–3 minutes until lightly caramelized and golden.
- Finish with honey, lime and a small pinch of salt.
Make the Lime Cilantro Slaw
- Add cabbage, cilantro and green onion to a bowl.
- Whisk together lime juice, honey, salt and pepper.
- Pour dressing over cabbage and toss well.
- Let sit 5–10 minutes so the cabbage softens slightly.
- For a creamier version, stir in 1–2 tbsp Greek yogurt.
Make the Jalapeño Yogurt Sauce
- Add Greek yogurt, cottage cheese, jalapeño, garlic, cilantro, chives, dill, lime juice, salt and pepper to a blender.
- Blend until smooth and creamy.
- Taste and adjust lime or salt if needed.
Assemble the Tacos
- Warm tortillas in a skillet.
- Fill each tortilla with pineapple glazed chicken.
- Top with lime cilantro slaw.
- Add caramelized or fresh pineapple.
- Drizzle with jalapeño yogurt sauce.
- Finish with extra cilantro.
- Serve immediately.
