Creamy roasted garlic ricotta pasta made with simple ingredients and packed with so much flavor. 🍝🧄
Roasting the garlic and tomatoes first creates an incredible sauce that’s rich, creamy and tastes like it simmered for hours. Then the pasta cooks right in the same pot, soaking up every bit of that flavor.
✨ Creamy Roasted Garlic Ricotta Pasta
Roast (400°F for 30-35 minutes):
• 1 head garlic, top sliced off
• 1 pint cherry tomatoes
• 1 sprig fresh thyme
• Olive oil
• Salt & pepper
Then:
• Squeeze the roasted garlic cloves back into the tomatoes and mash together.
• Stir in 1/4 tsp crushed red pepper flakes.
• Add 1 lb spaghetti.
• Pour in enough chicken or vegetable broth to just cover the pasta.
• Cook on pasta mode until the pasta is tender, stirring occasionally if needed.
• Stir in ricotta cheese and fresh basil until creamy.
Simple ingredients. Big flavor. Minimal cleanup.

Apple Pie Chia Pudding 🍎
I don’t know about you, but fall is calling my name!!!
This is your sign that cozy breakfast season can start a little early.
Creamy cinnamon chia pudding topped with warm caramelized apples and crunchy walnuts. It tastes like apple pie, but it’s made with simple ingredients and is perfect for meal prep.
✨ Apple Pie Chia Pudding
Chia Pudding
• 2-2 1/2 tbsp chia seeds (use 2 1/2 tbsp for a thicker pudding)
• 3/4 cup unsweetened almond milk
• 2 tsp honey or maple syrup
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon
• Pinch of nutmeg
Optional Protein Boost
• 1/2 serving vanilla protein powder
Caramelized Apples
• 1 medium apple, diced
• 1/2 tsp cinnamon
• 1-2 tsp honey or maple syrup
Optional Toppings
• 1 tbsp chopped walnuts
• Drizzle of date caramel
1. In a jar or bowl, combine the chia seeds, honey or maple syrup, vanilla, cinnamon and nutmeg.
2. If using protein powder, whisk it into the almond milk until smooth first.
3. Pour in the almond milk and stir well.
4. Let sit for 5 minutes, stir again, then refrigerate for at least 3 hours or overnight.
5. Cook the diced apples with cinnamon and honey or maple syrup until soft and lightly caramelized.
6. Top the chia pudding with the warm apples, walnuts and date caramel/ caramel before serving.

Everything you love about cheesecake, made with simple ingredients and baked into the perfect single serve dessert.
Creamy cottage cheese, a touch of cream cheese and an easy oat crust give these that classic cheesecake texture. Top them with a homemade cherry compote and you’ve got an easy dessert that’s perfect for meal prep or satisfying a sweet craving that adds 10g of protein each.
Oat Crust
• 3/4 cup rolled oats, blended
• 1 -2 tbsp melted grass-fed butter ( I start small)
• 1 tbsp monk fruit sweetener
• Pinch of salt
Mix and press into 6 lined muffin cups. Bake 350°F 6-8 min, then reduce heat to 325°F.
Filling
• 1 cup cottage cheese ( I use 2%)
• 1/2 cup low fat cream cheese
• 2 eggs
• 1/4 cup monk fruit sweetener
• 1 1/2 tsp vanilla extract
• 1 1/2 tsp lemon juice
• 1 1/4 tsp arrowroot powder (or you can use cornstarch)
Blend until smooth. Pour over the crusts and bake for 20-22 minutes, until the edges are set and the centers still have a slight jiggle. Cool then chill for at least 4 hours.
Cherry Compote
• 1 cup frozen cherries
• 1 tbsp monk fruit sweetener
• 1 tsp lemon juice
• 3/4 tsp arrowroot + 1 tbsp water
Simmer until the cherries soften, stir in the slurry and cook until thickened. Spoon over the chilled cheesecakes.

🍔 High Protein Big Mac Casserole
All the flavors of a classic Big Mac in an easy, high protein casserole. Made with lean ground beef, protein pasta, melty cheddar and a homemade burger sauce that’s creamy, tangy and so good.
Perfect for busy weeknights, meal prep or when you’re craving comfort food that still fits your goals.
Ingredients
14 oz @barillaus Protein pasta (I used Cellentani)
1 lb 95% lean ground beef
1 small yellow onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
2 tbsp ketchup
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
1/2 cup low-sodium beef broth
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
Salt and pepper, to taste
1 1/2 cups shredded sharp cheddar cheese, divided
Big Mac Sauce
1/4 cup plain Greek yogurt
1 tbsp avocado mayo
1 tbsp yellow mustard
1 tbsp ketchup
2 tbsp dill relish
1 tsp pickle juice
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp paprika
Pinch of salt and black pepper
Directions
Cook the pasta until al dente.
Brown the ground beef and onion in a large skillet. Add the garlic and cook for 30 seconds.
Stir in the tomato paste, ketchup, mustard, Worcestershire, beef broth and seasonings. Simmer for 2-3 minutes.
Mix in 1 cup of the cheddar until melted, then stir in the cooked pasta.
Transfer to a baking dish, top with the remaining cheese and bake at 375°F for 15minutes, until hot and bubbly.
Whisk together the burger sauce ingredients while the casserole bakes. Drizzle over the top before serving and add extra dill relish if you love that classic Big Mac flavor.
